Wusthof refers to it’s Ikon Blackwood line as “the jewel of Wusthof.” These knives are completely forged from one piece of X50CrMoV15 (a stainless steel grade) stainless steel with a triple riveted wooden handle. While the standard position of the bolster between the handle and blade is an integral part of a precision forged knife providing heft and balance, the second bolster at the end of the handle completes the feel and ties in modern design.

The Wusthof Ikon Blackwood paring knife is made from African Blackwood (Grenadill wood) with a good quality steel blade that offers more than adequate resistance to chipping and corrosion. It also has an ergonomic handle, a full tang, a reduced (heel-less) front bolster with an additional bolster at the end of the butt of the handle. In contrast, VG-10 (used in Shun Classic knives and Tojiro knives) has 0.95%-1.0% carbon and SG-2 (used in Shun Elite) has 1.25-1.45% carbon.

One of the best features of the Ikon paring knife line is its reduced bolster. This bolster design solves the problem of having to frequently sharpen the blade, plus it makes it much easier to sharpen. It’s knife edge is sharp out-of-the-box compared to other paring knives. The ergonomic handle fits your hand nicely and the second bolster on the back of the handle shifts the center of gravity significantly toward the handle. The African blackwood is very beautiful, smooth to touch and best of all: it doesn’t absorb much water.
